Our store purchases whole carefully selected Akaushi beef cows raised in Aso. Before our Akaushi beef is processed into individual blocks, we always "dried the carcasses" for about two weeks. This involves hanging the carcass (before it is divided and deboned) in a refrigerator with the temperature and humidity regulated and out of the wind. Drying removes excess moisture from the meat, making it moist and more flavorful.Enjoy with our special homemade black garlic sauce.
